Chocolate Chip Cupcakes with Chocolate Buttercream Frosting

I have a secret to share. 


I love cupcakes. Like, really really really love cupcakes. 

I loved cupcakes before it was cool to love cupcakes. 


Cupcakes are kind of my thing. 




They're the perfect dessert for any occasion. Birthdays, Baby Showers, Weddings or just because. I mean. Really, what is there not to love about a perfectly individual sized dessert. 

You don't have to share a cupcake with anyone. 





So, because I love cupcakes so much. I decided to share another cupcake recipe, just because I love you so much.

Chocolate Chip Cupcakes

1 1/2 c all purpose flour
1 tsp baking powder
1/2 tsp salt
1 stick (1/2 c) unsalted butter, room temperature
1 c sugar
3 large eggs
1 1/2 tsp pure vanilla extract
3/4 c milk 
1 bag semi-sweet chocolate chips

Preheat oven to 350 degrees. Line a cupcake pan with cupcake liners and set aside. 

In a medium size bowl, sift together flour, baking powder and salt. In another larger bowl, cream together butter and sugar until light and fluffy. Add in the eggs, one at a time. Beat in the vanilla. 

Combine flour mixture and sugar mixture along with the milk, alternating the flour and milk. 

Stir in your chocolate chips (if you don't want a ton of chocolate chips in your cupcakes only add about half the bag). 

Divide batter evenly among liners, about 3/4 of the the way full. 

Bake for about 20 minutes or until a toothpick inserted into the center of a cupcake comes out clean (not doughy). 

Cool completely. 

For the Chocolate Buttercream Frosting:

2 c powdered sugar (confectioners sugar)
1 stick (1/2 c butter)
1 tsp pure vanilla extract
3 tbsp cocoa powder
2 tbsp milk. 

Cream together sugar and butter adding the wet ingredients (vanilla and milk as needed). Add in the cocoa powder 1 tbsp at a time, until you reach your desired level of chocolatey goodness. If the frosting seems to dry, add a little bit more milk. If it seems to wet, add a bit more powdered sugar until you reach the right consistency.
