Summer Squash, Goat Cheese & Balsamic Flatbreads

i don't know about you, but i have so much squash in my kitchen, i'm running out of ideas!

i've put it in eggs, used zucchini in breads, muffins, fritters, the list goes on and on.

and from the looks of it, my csa basket doesn't appear to have an end date for the ample supply of summer squash heading my way.

but i found a new way to eat it that is so good! 
remember when i made these using these way back when?

well i used the same basic recipe for the flatbreads, but switched up my toppings, using summer squash, marscapone, mozzarella, carmelized onions, balsamic chicken and goat cheese and holy wow was it an explosion of flavors in my mouth. 





it's so good and so easy that you have to go make this tonight!

Summer Squash, Goat Cheese & Balsamic Flatbreads
Makes two overflowing flatbreads

Lavash Flat Breads (you can get these at Trader Joe's)
4 tbsp Marscapone Cheese
1 c shredded mozzarella
1 summer squash, thinly sliced
shredded chicken 
balsamic glaze
1 c crumbled goat cheese 

Lay out your flat breads on a cookie sheet. Spread about 2 tbsp of marscapone cheese on each flatbread. Layer your squash, sprinkle with mozzarella, layer the chicken and carmelized onions and sprinkle the goat cheese and roasted garlic on top of the pizza. Grill on your BBQ for about 5 minutes. 

When the crust gets nice and toasty, take them off and drizzle the balsamic glaze over the pizza.

Avocado Oatmeal Chocolate Chip Cookies

say what?!?!

yup! that's right! i put avocados in my oatmeal chocolate chip cookies. 

but why?!?! why ruin a perfectly good batch of delicious oatmeal chocolate chip cookies by putting avocados in them?!?! 

no i'm not crazy. and no it's not some weird pregnancy craving (and no i'm not pregnant!) 

but apparently putting avocados in everything is a thing. don't believe me? check out my avocado egg salad here,  or this recipe for avocado goat cheese crostini (side note: i'm dying to try this!)

so when i saw this recipe for avocado oatmeal chocolate chip cookies on eat. live. run i first thought.....gross! who would put avocados in their cookies? but as much as i tried, i couldn't shake it. 

i had to try them myself. 

i'm so glad i did. 

they really make the cookies so light and fluffy and delicious. 

and just plain good.

so go make these, i promise you'll thank me later ;0)

A Day Date

this past weekend was my official one year anniversary of living in the pdx.

husband and i had the best day date to celebrate ;) 

i wanted to share photos from our day! 

we started off with making our own wine at Tigard Wine Crafters!

it was fun, and i'll share more about this in a few weeks when we get to go back and bottle it up!

then we headed downtown to the foodcarts to grab lunch and explore the Portland Art Museum.

 after the museum we headed down to Water Ave where the PDX Pop Now free music festival was going on....there were so many great local bands and we had so much fun dancing, drinking and enjoying the sun!







and in between watching all the great acts, we stopped by hair of the dog brewery to do a little beer tasting as well as check out some awesome views of our new city lit up at night!

Slutty Brownies

have you guys heard of slutty brownies?


oh my god!

so good. 

so so so so very good. 

slutty brownies have rocked my world.

get ready because they'll rock your world too.

it's a chocolate chip cookie topped with oreos and then covered in a fudgy brownie mixture that you bake all together to turn into the most delicious brownie you'll ever eat in your entire life.



mind blown.

i made husband take them to work with him, because you can't just keep slutty brownies in the house.

you eat them.

and that can be very very dangerous.

Driving the 101

on our way back from the Redwoods, husband and i decided to drive hwy 101 home. 

it's something we've both wanted to do so we went for it. 

even though we knew it would make for a long trip home. 

it was so worth it. 

the 101 headed north through oregon has some pretty incredible views of the ocean. 

along the way we stopped in Port Orford, OR, the Oregon Dunes, and Newport, OR to eat (and drink) at the Rogue Brewery
