Honey Whole Wheat Sandwich Bread

Is there anything in the whole wide world that smells better than homemade bread? It's pretty hard to compete with dontcha think? ;) 



I've never made sandwich bread in my entire life. Foccacia bread. Yes. I've even tried my hand at dinner rolls and a rustic baguette style bread. Both delicious. But I didn't think it was possible to make homemade sandwich bread. Until now. 


You guys it's so easy and it tastes so much better than what you buy in the grocery store. It also makes your house smell so good. And it's sort of like time travelling back to the 1900s. Not that we would want to do that (I like indoor plumbing) but it's fun to dream right? 


So please please please go make this. Then make your self a sandwich. Like now.

Honey Whole Wheat Sandwich Bread

4 c Whole Wheat Flour
3 c All Purpose Flour
1/3 c honey
1/4 c olive oil
3 tsp salt
1 .25 oz instant yeast
2 3/4 c warm water (about 100-105 degrees)

In a large bowl combine the water and yeast and let sit for 2-3 minutes. Slowly add the honey, olive oil and salt to the water/yeast combination and stir to combine. 

In your kitchen aid mixer, attach the dough hook and slowly combine both flours and the liquid mixture. Mix together and then knead for about 5 minutes until the dough becomes elastic. If your dough is sticky, you may need to add some more flour. 

Place the dough in an large, lightly oiled bowl and put in a warm area. Let it rise till it doubles in size (about an hour). 

After your dough has risen, punch it down and divide it in half. Put each half in 2 lightly oiled loaf pans and cover. Let rise again, about 30-50 minutes or until the dough rises above the rime of your loaf pans. 

Bake in a 375 degree oven for 30-35 minutes or until the bread is browned on top. 

This yields two sandwich loaves and you can easily freeze the extra loaf by wrapping it tightly in saran wrap and then placing it in a freezer safe bag.
