lincoln headed back to school after a two week winter break last week. i wanted to treat him to a little something special on his first day back, so kevin and i picked him up together and headed to starbucks for a little "hot cocoa" treat!
lincoln doesn't get a ton of sugar, and when he does he turns into a sugar monster! so for his "hot cocoa" i asked the barista to make him a kids vanilla steamer with whole milk and half the amount of vanilla syrup. this way he still gets a little "treat" but doesn't turn into a wild man.
i am always amazed at what ends up entertaining our little guy, and he turned starbucks into a toddler play land. he enjoyed climbing in and out of the big chairs, but the coolest toy was a giant caution cone that he thought was the best thing ever.

Chocolate Chip Oreo Cookies
my husband is a cookie monster! i think i may have mentioned this before, but if i haven't, now you know. he would eat cookies all day if he could. so it was kind of a no brainer stocking stuffer idea this year to give him a year of cookies! cookie coupons that is. i made a cookie coupon for each month of the year and put a different/new cookie on each one. january's cookie is an oreo chocolate chip cookie from two peas and their pod and it was amazing!

Makes about 18 cookies (after some taste testing of course)

Chocolate Chip Oreo Cookies
Recipe from Two Peas and Their Pod
Makes about 18 cookies (after some taste testing of course)
1 stick softened butter
6 Tablespoons sugar
6 Tablespoons brown sugar
1 egg
½ teaspoon vanilla (I used 1 tsp.)
1 ¼ Cup flour
½ teaspoon baking soda
½ teaspoon salt
10 Oreo Cookies, broken up/chopped
1 cup chocolate chips
Preheat oven to 350 degrees F. Cream butter, and sugars until well combined. Add egg and vanilla until mixed well. Place flour, baking soda and salt into a large bowl, stir to combine. Slowly add dry ingredients to wet ingredients then stir in Oreos and chocolate chips until just combined.
With a medium cookie scoop, scoop onto a parchment or silpat lined baking sheet. Bake for 7-9 minutes (I had to bake mine for 10) or until cooked, but still soft. Let cool on baking sheet for 3 minutes before transferring to cooling rack.

A Day in the Life: The Working Mom Edition
when lincoln was just a few months old i did a little "day in the life" post alongside his monthly updates. things have changed quite a bit since then. i'm working full time now, husband is home permanently and little man is not so little anymore.
i thought it would be fun to do a day in the life post, a working mom edition. this one will be much shorter since the vast majority of my day is spent at work (unfortunately and fortunately all at the same time), but i know so many moms out there are working moms and our "day in a life" with our little ones is just as important as the stay-at-home mom one.
so here goes:
6:00 am wake up! husband and i both wake up. if lincoln is still sleeping, one of us stays with him while the other person starts to get ready. we usually take turns doing this so one day it's my turn then the next it's kevin's. lincoln sleeps in his crib from 8pm to anywhere from 4:45 - 6:00 am. we can usually get him back to sleep for another hour (usually until 6:30-7 am) or so if we bring him into bed with us. sleep is so important for little ones that we try and get him back to sleep until at least 6:30. this is also why one of us usually stays with him, since he definitely won't go back to sleep in his crib at this hour.
7:00 am - wake up/diaper change/breakfast for little man. by 7 am, lincoln is almost definitely awake and kevin and i are usually mostly ready for the day (dressed, showered, etc.). lincoln wakes up and one of us gets his diaper changed. if he hasn't finished his bottle while laying in bed over the last hour, he finishes it cuddled up on my lap and we get his breakfast ready. breakfast usually consists of oatmeal and fruit, or fruit, cereal and yogurt. some days lincoln is an awesome eater and will eat anything and everything. other days he's decided he longer likes his staples. on these days we usually end up getting a squeeze pouch down him. i love the Plum Organics Mighty 4 squeeze pouches. he definitely needs more calories than the 80-90 that are in each pouch, but on his picky days i know he's at least getting a mix of healthy fats, protein, fruits/vegetables and grains. kevin will either eat breakfast now too or a little after i leave. i typically take my breakfast to go and eat at work.
7:00 - 7:45 am - finish up breakfast/finish getting ready/ playtime. after breakfast, kevin and i take turns finishing up getting ready and playing with lincoln until it's time for me to leave for work. for christmas, nana and pop pop gave our little guy a kitchen playset and he is in love. we usually "make breakfast" during this time until it's time to go.
7:45 am- mama leaves for work. i have about a 40 minute commute to work and our office opens between 8 and 8:30. kevin and lincoln send me along my way with a kiss and some much needed coffee. i soak up as much time in the morning with lincoln as i can, so i tend to arrive to the office around 8:30. on thursdays and fridays, little man joins me when i leave and i drop him off at daycare on my way to work. on these days we tend to leave around 7:30.
8:30 am - 5:00 pm - mama's working. during this time kevin and lincoln's schedule varies since kevin is in school full time. monday through wednesday, little man hangs out with nana while kevin goes to class and then hangs with daddy again once school is over. sometimes i'm even lucky enough to get photos sent througout the day! thursdays and fridays lincoln heads to daycare to play and hang out with friends.
5:00 pm - heading home. i try to leave the office by 5:00 pm so i can get home around 5:40-5:45. most days this is accomplished but there are days when staying late is necessary.
5:45 pm - mama's home! every single night i walk into the door and little man comes running to greet me. it is the best feeling ever. i scoop him up in my arms and smother him with kisses.
5:45 - 6:15 pm - dinner prep. a lot of nights kevin has dinner either prepped and ready to go or it's already finished and waiting for me to arrive. (i know, he's awesome!). i tend to meal plan a week in advance and send the meals with recipes to kevin along with a grocery list. we shop from the list on the weekend and depending on the meal/night, one of us cooks. if it's a meal that will take some more time, kevin usually gets it started and if it's a quicky, i do it once i get home. we almost always have our sous chef in the kitchen helping too ;0)
6:15 - 6:45 family dinner time. we're pretty good about sitting at the dining room table every night to eat dinner as a family. part of this is convenience. little man is a messy eater and if we ate anywhere else we would have a trail of food throughout the house and the other part is because i really think it's important to eat dinner as a family. especially since i'm working it's one of the few times a day we're all together as a family.
6:45 - 7:15ish. play time! honestly our evenings vary, depending on the day, but there is usually playtime after dinner. when it's warmer and the sun doesn't go down by 4:00, we usually take a family walk around our neighborhood. i cannot wait till it warms up enough and we have sunlight again so we can get back to our evening walks. every other night, lincoln gets a bath, so if it's bath night, playtime occurs in the water. little man is a big fan of bath time!
7:30 - 8:00 pm. evening bottle and television show. we typically don't let lincoln watch a lot of television during the day. he does get to watch 30 min of sesame street and then in the evening we watch one or two episodes of some disney jr show (jake and the neverland pirates and chugginton are favorites!) while he has his evening bottle and we wind down from the day. little man usually cozy's up on my lap with his bottle and a blanket and we watch our show before getting ready for bed.
8:00 pm. bedtime! after his bottle is finished he heads to the bathroom to brush his teeth. then we pick out a story and put lincoln into his crib. we read a story together, turn on his music box and whoever is putting him to bed sits beside the crib until he falls asleep. he likes to hold onto our hand as he drifts off into dreamland and it usually only takes about 15 minutes.
8:15 - 10 pm. prep for tomorrow/homework/treadmill/wind-down. after the little guy goes to bed our evenings usually consist of prep time for the next day (packing lunches, getting the coffee maker ready to go, prepping bottles, etc.). kevin usually has some homework to work on, and i'm trying to get back into a regular workout routine 3-4 days a week. on homework free nights and workout free nights, we usually watch netflix (hello "Making of a Murderer"!!!) and hang out before heading to bed between 10 and 10:30. i've been known to get sucked into an old greys anatomy episode or two as well, so sometimes that bedtime gets pushed back even later. ;0p

Weekend Recap + a Mini Sausage Vegetable Frittata Recipe
hello hello and happy tuesday! we're five days into the new year, and i don't know about you, but i am still going strong on my new year's resolutions ;0)
one of those resolutions was to give up facebook. i seriously think i wasted hours every day on facebook. so in an attempt to live more in the "now" and also so my little man doesn't think mommy likes her iPhone/laptop/whatever electronic device more than him, it was time to hit the breaks. i deactivated my account on new year's eve and i haven't been back since.
one thing i really used facebook for, and will miss are the photo albums. for the past 7 years i've kept pretty solid photo albums going on facebook and when my laptop was stolen right before our wedding, the only place left where i could find those photos was on facebook. the good news about deactivating your account and not cancelling it, is they store all of your information and you can always go back and have access to anything and everything that is there. why am i telling you all this? well, i love photos and looking back on all the fun activities we've done over the years. this blog is also a place where i share so many of those fun activities. so, i'm bringing back some weekend recap posts so i can still have a place to look back and store photos and memories from our daily lives. i used to do this way back in 2012 and 2013 via my "life lately" instagram photo posts.
so here we go...starting 2016 off with a little weekend recap:
friday was new year's day, and unfortunately our family got hit with a stomach bug. little man came down with it early thursday morning and we had an unhappy camper on our hands for most of the weekend. he got sick all over both husband and i, lost most of his appetite and we're still waiting for it to come back. husband came down with a bug as well (most likely the same one) and he had to start his first day back at school feeling under the weather. so we began our weekend, lazy and in our pajamas.
we've been working on a little kitchen "update" for the past 3 almost 4 months (i'll do a post and show pictures when it's finally done!). it's amazing how long something can take when you have a toddler who is into everything. we have to strategically plan out when we're (by we i mean husband) going to work on the kitchen so lincoln doesn't get into everything. so saturday, i took my little man (since he was feeling better) down to mobius kids museum to play while husband rented a tile cutter to make some headway on our new backsplash. lincoln always has an absolute blast at mobius and if you live in the spokane area and have a little one, i highly recommend it. after mobius, little man and i had a coffee "date" at starbucks before heading home to hang out with daddy.
sunday we had a visitor! a friend of mine from grade school (we've known each other since kindergarten!) is in town while on break from nursing school. she came over so we could catch up over coffee and goodies and we chatted for a good 4-5 hours before she had to go and we had to get on with the super exciting tasks of laundry and dishes and of course football watching. we had some minor flooding in our basement, so we also had a visit from the plumber on sunday so we could get said laundry and dishes complete!
sunday evening we have a tradition of watching a family movie before settling down for the night. kevin and i usually use sunday to prep for the week as well, so i usually meal plan, grocery shop and make ahead any breakfast or other items i can for the week. this week i made mini sausage and vegetable frittata's to take for breakfast all week. you can find the recipe below!

Mini Sausage and Vegetable Frittata's
Makes 12 mini frittata's
Servings 6
8 eggs
1/4 cup milk
1 tbsp butter (or olive oil)
1/2 of a white onion, finely chopped
1/2 of a pepper, diced (i used yellow but red, orange or green would be good too!)
1/2 cup of broccoli, chopped
4 oz breakfast sausage
2 oz cheddar cheese, shredded or finely diced
salt and pepper to taste
1. Preheat oven to 375 degrees.
2. In a large pan, melt butter and toss in onions, peppers and broccoli, cook 3-5 min until onions become translucent
3. Crumble in the breakfast sausage. Continue to cook the onions, peppers and broccoli until sausage is cooked through (about 10 minutes). Remove from heat.
4. In a large bowl mix together the eggs and milk. Season with salt and pepper.
5. Take a cupcake pan and spoon some of the sausage and vegetable mixture into each cupcake section. it should fill each section about half-way through.
6. Sprinkle the cheese on top of the sausage mixture.
7. Top each section off with the egg/milk mixture until each cupcake section is just full.
8. Bake 18-20 minutes or until cooked through.
***Notes: I store these in the fridge in tupperware and take two to work with me each morning. It's a healthy, filling breakfast that will last all week. I don't spray my cupcake pans because they're non-stick and there is usually enough oil/butter remaining on the sausage/vegetable mixture that you don't really need it.
For those of you who are interested I entered this recipe into my calorie counter and 2 frittatas have the following nutritional stats:
Calories: 132
Fat: 8 g
Protein: 11.6 g
Carbs: 3.5 g
Fiber: .5 g
You could bulk up the calories by adding a piece of whole wheat toast!

Happy New Year!!
2015 was pretty great.
we had trips to napa/sonoma, hat island, upstate new york, new york city, san francisco and the lake.
lincoln turned one, started walking (and then running).
husband moved back for good and went back to school, and i returned to working full-time.
there were summer concerts, festivals, football and basketball games.
husband and i celebrated our third wedding anniversary and little man started school (daycare).
we had an epic windstorm that took out power through out our city for an entire week and we celebrated holidays with family and friends.
as we head into the new year, i'm feeling grateful, blessed and excited for a new year. i think 2016 is already shaping up to be as amazing as 2015 if not better.

The Merriest of Christmases
i saw something on the internet the other day...it was a photo and on it said "i used to think being a kid on christmas was the best thing ever, but it turns out having kids on christmas is." this is soooooo true!
last year's christmas with lincoln was amazing, but this year was even better. every single day this month he would wake up and be mesmerized by all the christmas decor, and when he finally got to open presents on christmas eve, he was so excited!
we started christmas eve morning with our "christmas box" which had our matching family jammies, a christmas movie and book, popcorn and hot cocoa. this year the christmas movie was rudolph the red nosed reindeer and it came with some little talking figurines. little man's face when he opened the box was pure joy!
later that day we headed out for christmas eve mass and then back to nana and pop pop's for their annual christmas eve party. after everyone left for the evening we opened presents from one another, and the moment the last present was open, little man curled up into my arms and fell asleep. best. feeling. ever.
we brought him home and husband and i went to work playing santa ;0) lincoln was a very good boy this year and santa brought him an activity table, and a stocking full of goodies. he was so excited to see it christmas morning! after opening presents, we all had breakfast as a family and then hung out in our jammies before heading back over to my parents house for christmas dinner. dinner was delish and we topped it off with this amazing dark chocolate, caramel oreo pie from the blog kevin and amanda. so freaking good.
and that was our very merry christmas. i hope you all had a wonderful christmas as well!

later that day we headed out for christmas eve mass and then back to nana and pop pop's for their annual christmas eve party. after everyone left for the evening we opened presents from one another, and the moment the last present was open, little man curled up into my arms and fell asleep. best. feeling. ever.
we brought him home and husband and i went to work playing santa ;0) lincoln was a very good boy this year and santa brought him an activity table, and a stocking full of goodies. he was so excited to see it christmas morning! after opening presents, we all had breakfast as a family and then hung out in our jammies before heading back over to my parents house for christmas dinner. dinner was delish and we topped it off with this amazing dark chocolate, caramel oreo pie from the blog kevin and amanda. so freaking good.
and that was our very merry christmas. i hope you all had a wonderful christmas as well!
