Homemade Acai Bowl

i have a new obsession! acai bowls. you guys, i've eaten one every single day this week. mostly for breakfast and tonight, i had one for dinner. they're so stinking good. i LOVE it when something that is so good for you also tastes so delicious that you can't get enough.


i tried my first acai parfait at a local juice cafe in downtown spokane, method juice cafe. i immediately fell in love (so did my little dude ;0) and realized quickly that i was going to need to start making them at home or my wallet was going to hurt. i searched everywhere in spokane for acai smoothie packs and couldn't find them anywhere!

so i did my research and found out that they sold sambazon smoothie packs in Coeur d' Alene at the Pilgrim's health market. score! so when little man and i went out to CDA last sunday to hang with my bestie, i made sure to stop by and pick up a couple of packs. i already need to go back because i literally have had one every single day now, and my supply is running low.

while sambazon shares a recipe for a smoothie bowl on the back of their packets, i've found that i like my bowls a little thicker, so here's the recipe i use below!

Acai Smoothie Bowl
serves one

1 Sambazon Smoothie Pack
1 banana
1/3 cup granola
berries/fruit of your choosing
2 tbsp peanut butter, melted
1/4 c coconut water, almond milk, coconut milk or non-dairy liquid of your choosing

run the smoothie pack under warm water for about 5 seconds. just long enough so that you can break it up into pieces. this will make blending much easier. place the broken up acai pieces into your blender along with 1 banana and 1/4 cup of the non-dairy liquid of your choosing. (i like coconut water or coconut milk). blend until smooth.

pour smoothie into a bowl. top with 1/3 cup of granola, chopped berries or fruit of your choosing, and drizzle the melted peanut butter over the top.
